The Easiest Fresh Pasta Recipe That Actually Works

Fresh pasta is simple, comforting, and incredibly rewarding to make at home. With just 4 eggs, about 2 cups of flour, and a pinch of salt, you can create silky, tender pasta perfect for any sauce.
Ingredients
4 large eggs
About 2 cups all-purpose flour (plus extra for dusting)
1 pinch of salt
Instructions
1. Make the Dough
Pour the flour onto a clean work surface and form a mound. Make a well in the center. Crack the eggs into the well and add the pinch of salt. Using a fork, gently whisk the eggs, slowly incorporating flour from the edges until a shaggy dough forms. You can also do this in an electric mixer using a dough hook if you have one!
2. Knead
Bring the dough together with your hands and knead for about 8-10 minutes until smooth and elastic. If the dough feels sticky, add a little flour; if too dry, add a few drops of water. Shape into a ball.
3. Rest the Dough
Wrap the dough in plastic wrap or cover with a bowl. Let it rest at room temperature for 30 minutes. This relaxes the gluten and makes rolling easier.
4. Roll Out
Divide the dough into portions. Roll each portion out using a rolling pin or pasta machine until thin enough to see your hand through it.
5. Cut the Pasta
Lightly flour the rolled dough, fold it gently, and cut into your desired shape - tagliatelle, fettuccine, or pappardelle. Unfold and dust lightly with flour.
6. Cook
Bring a large pot of salted water to a boil. Cook the fresh pasta for 2-3 minutes, or until tender. Drain and serve immediately with your favorite sauce.
